Recipe Tahin (or Tahini)

1.Place sesame seeds in a dry frying pan over medium heat.
2.Toast until golden-brown, but do not cook for more than 5 minutes, then leave to cool. Alternatively, roast the sesame seeds in the oven at 180°C for 5 min.
3.Blend to a crumbly paste.
4.Add 2 tablespoons of olive oil and continue blending until you obtain a thick, smooth paste.
5.Add salt to taste and store in a jar in a cool place for one month.
If the mixture separates, stir the jar to ensure an even texture.
